The noun is a class of words as are verbs and adjectives. Thus, within nouns there are many classifications.
The subject, on the other hand, is a grammatical structure, as is the predicate in a sentence. So, although the subject requires a noun (which will act as the nucleus of the subject), it also has other elements within it.
However, the two should not be confused since in certain cases the subject consists of a single word: the core noun of the sentence.
In short, a noun is a class of words, while a subject is a way of ordering a sentence grammatically.
In addition to this, it is important to note that a noun can be located in the subject or in the predicate, but it will only fulfill the core function in the subject of a sentence.
